Natural pears

Sometimes, I think of things that go together naturally: Tomato and basil, honey and lemon, or chocolate and pears. Within a tradition, I look at ways to look at it differently. I enjoy a warming apple crisp in winter because of its heartiness and another magical combination of oats and apples. I then thought of the pairing of chocolate and pears again and decided to make a fruit crisp with those flavours

Spiced Chocolate Pear Crisp

Chocolate Spiced Pears:

4 pears, chopped into 2cm/1″ chunks (about 4 cups)

1/2 cup brown sugar

1 tsp ground cinnamon

1/2 tsp hot paprika (or cayenne)

1/4 tsp salt

1 Tbsp Gold Forest Grains soft white flour

3 Tbsp dark chocolate, coarsely chopped

In a medium bowl, combine the pears, brown sugar, cinnamon, paprika, salt and flour. Divide the spiced pears among 3 15cm(6″) x 25cm(9″) pans. Sprinkle them with the chopped chocolate and set aside.

Chocolate Crisp Topping:

3/4 cup Gold Forest Grains soft white flour

3 Tbsp cocoa powder

1/2 cup Gold Forest Grains traditional oats

1/4 cup brown sugar

1/4 tsp salt

3/4 cup butter

In a medium bowl, combine the flour, cocoa, oats, brown sugar and salt. Add the butter and crumble into the dry ingredients. Sprinkle evenly over the spiced pears in the 3 small pans.

Bake in a preheated 180C/350F oven for 50-60 minutes or until the crisp topping firms up without starting to dry out. Allow to rest for 20 minutes before serving. Serves 6-8.
