With all of the wonderful fruit at this time of year, the most natural thing to make is a fruit salad. I normally just eat a bowl of cherries or strawberries as a snack and call it a day, but sometimes, dressing it up with complimentary flavours is nice for a change.
I like sweet spices to accent the fruit flavours so I decided to use cardamom. Cinnamon would obviously be a perfect compliment to any fruit, but I like to use a variety of spices.
Maple Cardamom Fruit Salad:
For the Maple Cardamom Syrup:
1/2 cup maple syrup
1/4 cup water
10 cardamom pods
In a small pot, add the maple syrup and cardamom. Bring to a simmer over medium heat. Simmer for 20 minutes. Turn off the heat and allow the cardamom to steep in the hot syrup for a further 20-30 minutes. Remove cardamom pods. Allow to cool completely.
For the salad:
4 cups mixed summer fruit (halved/pitted cherries, raspberries, stemmed strawberries, blueberries)
Reserved Maple Cardamom Syrup
In a large bowl, add the mixed summer fruit. Pour over the syrup and stir gently to coat all of the fruit until it is glossy and sticky with flavoured syrup. Serves 4-6 depending on portion size.
