Blueberry Coriander Egg Salad Sandwich

Yes, the summer of salads include the “salad sandwich” idea. It’s as refreshing as any salad on a hot day and is composed and dressed the same way as a traditional salad. It could be served as a salad on a bed of greens instead of on bread if you like, so here’s another sandwich idea that went through the “Holy crap I have a lot of summer fruit” filter. Haha!

Blueberry Coriander Egg Salad Sandwich

For the Blueberry Coriander Mayo:

1/2 tsp flax seeds
1-1/2 tsp whole coriander seeds
1 Tbsp rice vinegar
1/4 cup maple syrup
1 cup fresh blueberries
1/4 cup cold pressed canola oil
1/4 tsp salt

Place all of the ingredients in a blender and purée until smooth. Set aside.

For the Blueberry Coriander Egg Salad Sandwiches

6 hardboiled eggs, peeled and finely chopped
1/2 cup fresh garlic scapes (or green beans), blanched for 4-5 minutes, cooled
3/4 cup Reserved Blueberry Coriander Mayo (you’ll have leftover mayo for another use)
8 slices whole wheat bread
8 fresh radishes, thinly sliced

Add the chopped hardboiled eggs, garlic scapes and mayo to a large bowl and gently fold together to combine. Spread mixture over 4 slices of bread. Top with sliced radish and another slice of bread. Serves 4.

      Thanks! And with the extra mayo, it’s awesome on a BLT or club sandwich. The sweetness of the fruit is great with smoky, salty bacon 🙂
